Weekend Recap: How I Spent Cinco de Mayo

THIS WEEKEND WAS LIT!!!!!! I had the best weekend of my life! I went to a concert with two close friends of mine on Cino de Mayo for Bahamas Junkanoo Carnival. We saw a lot of amazing artists like Visage, Bunji Garlin, Faye Ann Lyons and most importantly MACHEL MONTANO! That's right folks. I FINALLY got to see the lengendary man in the flesh! And he is just as sexy as ever!

There was a moment where I doubted if I would actually get to or not after the rain came down. But I was determined! I stood in the rain during and after Bunji and Faye's performance waiting. And guess what, they shut down the whole thing. Lights turned off, speakers, lights and other equiment was covered and sheltered from the rain and most of the crowd scattered. Some people went home, but again, I was determined. I waited under a tent. Just waited. Machel couldn't let me know. I knew he would somehow sense my desire to see him just once in concert (let me know if I'm getting overly dramatic with this).

And after about 10 minutes of waiting, Bodine Johnson the host came back out and said, "Are you guys ready for Machel? I NEVER RAN SO FAST IN MY LIFE! I actually left my friends behind and ran off in one direction while they went in another. I sprinted to the front and witnessed what I believe to be a miracle (again let me know if I'm getting overly dramatic with this).

There is something so liberating about dancing in the rain! I enjoyed every minute of it. Singing and chanting with the crowd awoke a spirit of fun in me that had been surpressed by the burdens of adulthood.

I rested on Saturday, then Sunday was my Cinco de Mayo dinner with my best friends. We turned up with sangria, margaritas, nachos and great music! My best friends are like family to me so it's always a good time when we're together. We played with the Charades and Dinner Party Conversation Cards and heard some really awkward answers that'll make anyone blush. The night totally made up for my failed attempt to catch a beach soccer game this weekend, but all in all, this was definitely the best weekend ever!

Cinco de Mayo Dinner Party Cards

It's Cinco de Mayo!!!!!! I'm not sure if I've ever been so happy for an excuse to cut loose, drink and party with friends. This weekend is going to be hectic but totally a blast! Tonight is night 2 of the Bahamas Junkanoo Carnival concerts and my favourite Soca artist (AKA my Trinidadian baby daddy) is performing: Machel Montano! Can you believe that I have never seen him live in concert? It saddens me to admit that. That's why I HAVE to fix it! I will be sorely disappointed if I miss my chance again.

So because the concert is tonight, which clearly takes priority, my Cinco de mayo party with friends is this Sunday. We're so excited! Even though we just had a party two nights ago, we're really going to get down this Sunday. To make this more interesting, I came up with these dinner party cards. Halloween Party Recipes to WOW guests

A Halloween party isn’t complete with mouth-watering and eye popping cuisine.  Eats that are tantalizing to the eyes and the taste buds.  Guests want to be spooked but also intrigued by the flavor of your food.  To capture their interest and appetite, try these recipes:

 

  • Mini brains made with a Thai flare (pork, ginger and scallions)

  • I’m a fan of cheeseballs: they’re fun to make, has endless ingredients and can be eaten with so any food items.   On this note, I believe the Pumpkin Cheeseball will be a pleasing centerpiece and go to snack. Don’t worry folks, it’s made of a variety of cheeses and is only the color of a pumpkin, not the flavor.

  • Maple Pumpkin Spice Chex mix – the aroma and flavor of pumpkin spice topped with maple flavor

  • Guests can grab and go,(or place into these fun cones/funnels) this monster munch of popcorn, candy corn and pretzels drizzled in caramel.

  • These Mummy Jalapeno Poppers are for the cheese and heat lovers!

  • Sweet n’ Spicy Popcorn Balls –Pumpkin Seeds (pepitas) and cayenne, give these popcorn balls and earthy and spicy flavor, which is accompanied with the sweetness of caramel.  Great for munching!

  • Deviled Chicken Lollipops – Honey Mustard glazed chicken drumettes are easy to eat and dip (served with hot sauce)

  • Pumpkin Pecan Bread Pudding – topped with whipped cream or ice cream, this warm treat will send warm sensations through your body (in a good way).  

  • Spider Eggs – Made with wasabi and avocado

  • Fondue anyone?  Using bananas, strawberries, marshmallows or pretzel sticks, this caramel chocolate fondue will be an easy crowd pleaser, with persons taking seconds and thirds as they stand nearby.

  • Pumpkin Cheesecake Fries – Cinnamon topped pumpkin cheesecake, fried and served with caramel sauce.  What’s there not to love?

  • Graveyard Dip – Think of a deconstructed Chicken Enchilada in both flavor and color, and this dip will be easy to create and just as easy to eat (with tombstone shaped tortillas)!

  • Brownie Bat Truffles – With truffles being one of the most highly sought out and expensive ingredients in the world, Bat Brownie Truffles can be the next best thing in flavor!

  • Cake Eyeballs – Bite these soft cake eyeballs covered in white chocolate.  You can add as much red gel icing as you’d like to make the eyeballs look more real and gruesome.

  • Roasted Pumpkin Seed Hummus delivers a smoky flavor and is an excellent pairing with Naan or pita chips

  • Ghostbusters Green Popcorn – extra slime provided by melted marshmallows

  • Bloody Good Cheesecake

  • The Blackout Chocolate Cake is decadent and intense, from top to bottom.  Guests will readily indulge in this chocolate bite, frosting and all!

Oreo Cupcakes

On Friday we celebrated the vice principal’s birthday with a surprise birthday party in the office because it’s her first birthday with us as vice principal. She was so surprised she almost cried! I made her a birthday card and got it signed by all of the teachers, and these AMAZING cupcakes! I really outdid myself on this one! Sure they take some time to make (especially when you’re operating out of a toaster oven, so you have to use a mini cupcake pan because the regular cupcake pan is too big to fit and you made enough batter for 16 cupcakes) but they’re totally worth it!

I’m so mad that I forgot my camera that morning so I had to take all of the photos with my cell phone and believe me, I am not cell phone photographer! Something as simple as getting the right angle confuses me but I did my best to show you guys how good and tasty these cupcakes are!

Oh, they are SO good.  What makes them extra good is the “frosting.”  It is less like frosting and more like a fluffy cheesecake. I surprised myself by making this frosting because it’s something I’ve never been good at! But to see it turn out so well (for the most part) gave me an extra confidence boost! I just knew she was going to like them!

OREO CUPCAKES

For the cupcake

·        1 1/3 cups self-rising flour

·        ½ cup unsweetened cocoa powder

·        3 tablespoons applesauce

·        1 cup white sugar

·        2 eggs

·        1 teaspoon vanilla extract

·        1 cup milk

For the frosting

·        1 package of cream cheese, 8oz. at room temp.

·        1 cups powder sugar

·        1 Tbsp vanilla

·        1 container of Cool Whip, 8oz. thawed

 

Directions

1 Preheat oven to 350 degrees F (175 degrees C). Line a muffin pan with paper or foil liners. Sift together the flour, and cocoa. Set aside.

2. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Add the flour mixture alternately with the milk; beat well. Fill the muffin cups 3/4 full.

3. Bake for 17 to 20 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean.

4. While the cupcakes cool, make the frosting.

5. Beat the cream cheese and vanilla together until smooth and fluffy.  Slowly add in the sugar while continuing to mix the cream cheese mixture.

6. On a low speed, add in the cool whip.

7. You may need to allow the frosting to set up in the refrigerator while the cupcakes continue to cool.  Make sure the cupcake are all the way cool before adding frosting.

8. Put your frosting in a pastry bag.

9. Stick the point of the pastry bag into the cupcake and squeeze a little frosting into the centre.  You will see the cupcake puff up.

10. Then frost the cupcakes like normal and sprinkle with crushed Oreo.

11. If you’d like, stick a piece of leftover Oreo in the frosting, for a little flair and extra cookie goodness.

TIP: Consume these almost immediately! I personally hate hard frosting. I like a soft, creamy frosting. But if you leave this at room temperature for too long, it'll melt and you won't be able to enjoy it, and if you put it in the fridge, well then, you'll just have a cold cupcake. And that's not fun!

Look Who's 30 Photo shoot!

This past weekend, I had the pleasure of shooting a friend of mine's 30th Birthday Party. That's where I used those super cool photobooth props! Everyone had a great time, and I was even gifted with the delicately sparkling and endlessly romantic perfume and limited edition, Chance Eau Tendre by Chanel! I love Chanel! I'm not obsessed with it, but I just love everything it stands for. But enough about me!

The decorators did a smashing job! I wanted to take everything home! And when the cake arrived, it was just too pretty to cut (but of course we still ate it)!

The holiday season is upon us and every woman is scratching her head trying to figure out what's the best outfit choice for that special event. Some women are body concious and some women are comfortable showing everything. There's nothing wrong with either. But you've also got the few that just can't seem to dress appropriately.
