Cauliflower Soup

There’s something about soups and winter that just go hand in hand. We had another cold front last week. Although it was very brief (only about 3 days) I thoroughly enjoyed it! It was nice to be able to wear my new boots and my cashmere sweater, and it was even nicer having someone to cuddle with. Probably one of the best things to do during cold fronts is to eat a hot bowl of soup. I’ve really gotten the hang of making soups lately. So much so, I don’t rely on recipes at all any more and I pretty just eyeball everything. No measurements, just a guess-ta-mation.

However as life gets busier, I haven’t been sticking to my Keto diet as well as I should’ve and it’s starting to show. I don’t always get to go to the food store so I ended up eating a lot of fast food as I ran errands. But this soup made me feel like I was getting back on track. It’s so simple and requires only a few ingredients. It can be kept vegetarian or you can add chicken and bacon bits like I did. Don’t feel pressured to cook fresh chicken, you can use leftover strips. This soup is really quick and easy to make. So, you can make a bowl of rich, delicious soup in less than 30 minutes!

Cauliflower Soup

INGREDIENTS

  • 1/8 cup white onion finely diced

  • 3 cloves garlic minced

  • 2 cups reduced-sodium chicken broth

  • 2 lbs . cauliflower florets

  • 1 cup heavy cream

  • Salt and pepper to taste

  • 1 teaspoon red pepper flakes

  • 1 teaspoon Cajun seasoning

  • 1 teaspoon lemon pepper seasoning

  • 1 cup ricotta cheese

  • 2 cups shredded chicken strips

INSTRUCTIONS

  1. In a large skillet, melt butter over medium heat.

  2. Add onion, and cook until soft, about 3-5 minutes.

  3. Add garlic, and cook, stirring frequently, for about 30 seconds.

  4. Pour in chicken broth.

  5. Add cauliflower, and cover skillet

  6. Let the cauliflower steam until fork-tender, about 10 minutes.

  7. Carefully add cauliflower and broth mixture to a blender.

  8. Add in heavy cream and ricotta cheese and blend until smooth.

  9. Season with salt and pepper to taste and other seasonings.

  10. Stir in shredded chicken strips

  11. Garnish with a pinch of shredded cheddar or Parmesan cheese, chopped chives and bacon bits if desired.
