Making dinner can be such a pain! Some days when I'm making dinner for the boyfriend, I feel like J-Lo in her music video, "Ain't Your Mama". I still avoid cooking meats like chicken and fish because I feel overwhelmed by seasoning and ensuring that it cooks thoroughly. What can I say? I love lazy recipes! I don't have time to be in the kitchen all night after working all day. But this means I often end up eating junk like Pasta Roni or frozen pizzas. I still haven't mastered the whole buying healthy groceries that last for more than one meal, but hopefully this whole "learn-how-to-garden" New Years resolution to will work and help me to save some coins.
So if you're like me, and you're looking for ways to eat healthier this year without spending an eternity in the kitchen or having to learn any complicated, expensive recipes, I've got something for you!
Honey Mustard Baked Salmon Recipe
Serves 2 | Prep Time: 10 Mins | Marinade Time: 30 Mins | Cook Time: 12 Mins
12 oz salmon, cut into two pieces
2 cloves garlic
3 tablespoons honey mustard
Scant 1/8 teaspoon salt
3 dashes ground black pepper
1 teaspoon olive oil
Chopped parsley leaves, rosemary or dill, for garnishing
Preheat oven to 400 F.
Combine all the ingredients for the Marinade together, whisk to combine well. Marinade the salmon for 30 minutes or best 2 hours. I added some rosemary to the marinade itself.
Arrange the salmon on a baking sheet lined with foil or parchment paper. Add the marinade to the salmon and bake for 12 minutes. Remove from heat, scoop the juice from the marinade on top of the salmon. Garnish with parsley, rosemary or dill and serve immediately.
NOTE: If you want it spicy, feel free to add some cayenne pepper to the marinade. I added some Parmesan cheese to mine just before I put it in the oven for a Parmesan crust salmon. What's your favourite way to enjoy Salmon? Share your favourite marinade or seasonings in the comment section below!
