Infused Salt Recipes

Infused salts are as easy as infused sugars, and even more versatile. They can be used not just for savoury recipes, but for sweets as well! And like an infused sugar, the flavour combinations are only limited by your imagination. This is my first time making infused salts and I decided to share them with others as great homemade gifts. Especially after my DIY Aromatherapy shower tablets didn’t go as planned.

I had no idea there were so many things you could do with infused salt. For example, orange-infused salt pairs well with a cranberry margarita. Then there is espresso salt, which would be amazing sprinkled over dark chocolate cookies. Or something more exotic, like a rosemary or red wine salt over leg of lamb.

So today I'm sharing three new recipes for infused salts that are great in the kitchen. I love sprinkling the kale lemon or the bacon parmesan over my pasta for a good seasoning.

Kale Lemon Salt

Makes 2/3 cup

Ingredients

·       4 to 5 kale leaves, stems and centre ribs removed, rinsed, and patted dry

·       1/4 cup walnuts or smoked almonds, chopped

·       Zest of 1 lemon

·       1/4 cup flaky sea salt

 

Directions

Active time: 10 minutes

Total time: 30 minutes

 

Preheat oven to 300° with racks in the top and bottom third. Line 2 baking sheets with parchment paper. Arrange kale in a single layer on 1 prepared baking sheet, and the nuts, and zest on the other, keeping ingredients separate. Bake until ingredients are nicely toasted, about 15 minutes for the nuts, and lemon, and 20 to 25 minutes for the kale.

Let cool to room temperature. Using a food processor fitted with a metal blade, pulse, kale, and nuts until finely ground. Transfer to a bowl and stir in the baked zest and salt. Transfer to an airtight jar. Store up to 2 months.

 

Bacon Parmesan Salt

Ingredients

·       1 ¼ cups Coarse Kosher Salt

·       2-3 slices bacon, cooked and crumbled

·       ¼ cup grated parmesan

Directions

Active time: 3 minutes

Total time: 3 minutes

 

Place all the ingredients in a coffee grinder or small food processor and pulse to process and combine.

 

Curry Salt

Ingredients

·       ½ cup coarse sea salt

·       12 medium dry bay leaves

·       ·       ¼ cup curry powder

·       2 teaspoons ground cumin or cajun seasoning

Directions

Active time: 3 minutes

Total time: 3 minutes

 

Place all the ingredients in a coffee grinder or small food processor and pulse to process and combine.
