As you all know I've been trying to stick to the ketogenic diet since May. It's really hard because I LOOOOOOOOVE pasta and I still eat it every day. I compensate by having really low carb meals around it. But sometimes I get tired of eating the same thing over and over and I look for fun ways to mix it up. I've been searching Pinterest for keto alternatives and I stumbled upon this recipe from Fat For Weight Loss (odd name I know).
So what exactly is cloud bread. I can feel you scratching your head trying to figure it out. Cloud bread is a great substitute for bread on the ketogenic diet. The term “cloud” comes from the fact that its quite light and fluffy tasting, which comes from the egg whites being mixed and folded into the rest of the recipe. Ideally, on a ketogenic diet you would be edging more towards whole foods and mixed vegetables, but sometimes all you want is something easy to take to work or to have a sandwich and feel like a normal person again.
In case you're wondering eggs are awesome for any diet! One large egg has around 5g of fat. There's so many healthy benefits, but be careful with the cholesterol, you don't want to overdo it. The bread is light as air and flaky, but holds it own in a sandwich, so it won't fall apart on you. I used mine to make a breakfast sandwich, with veggie cheese and I absolutely loved it! It was my first sandwich that I didn't have to feel guilty about all year! Gosh that sounds bad now that I'm writing it. And I can't believe how easy it is to make! This cloud bread is definitely going to be a staple in my weekly menu.
Keto Cloud Bread
- 4 Large Eggs
- 1/2 tsp Cream Of Tartar
- 1/4 Cup Cream Cheese
- 1/2 tsp Salt
- 1/2 tsp Garlic Powder (Optional- I used a Mediterranean Herb Mix)
Crack the eggs and separate the whites from the yolks. Put all the whites into a bowl and whisk with an electric mixer for 1 - 2 mins.
Add the Cream Of Tartar and whisk again for another 1 min. The mixture should start making soft peaks
In another bowl, add the yolks and the cream cheese and garlic powder (optional), mixing on high until well combined. Gently fold this mixture into the egg whites.
Spoon out the final mixture onto a tray lined with baking paper. They do fluff up a bit in the oven so leave enough space to breathe!
Put in the oven at 180 c ( 375F ) for 15-20 mins until slightly golden brown on top. Serve and enjoy!
