Breakfast can be complicated. Especially if you're still hungover from my boozy cheesecake from yesterday. So when I got up this morning, with nothing laid out in front of me (my step-dad usually makes breakfast) it was on me to make breakfast for the family and still make it to work on time. I was ten minutes late. But these babies were totally worth it! This may be more of a weekend breakfast item, but if your fancy taste buds have no sense of time, surprise your family with this super good, and surprisingly easy recipe.
Lemon Banana Cheesecake Waffles
- 4 eggs, separated
- 2 1/2 cups milk
- 2 tablespoons applesauce
- 1 tsp Vanilla Extract
- 3 cups self raising flour
- 1/4 cup caster sugar
- 1 3/4 cups cream cheese
- 1/2 cup lemon curd
- 1 small banana sliced
- 1/4 cup icing sugar
Place egg yolks, milk, butter and vanilla in a large jug and whisk until well combined.
Combine flour and sugar into a large mixing bowl and make a well in the centre. Carefully whisk in egg milk mixture to form a smooth batter
Beat egg whites with electric beaters until stiff peaks form. Gently fold egg whites into batter.
Preheat Waffle maker. Using a cup, pour ½ cup of batter into each waffle square. Close lid and cook until timer has finished. Set aside to cool completely.
Beat cream cheese, banana and lemon curd together until smooth and set aside.
To assemble, sandwich waffle with cheesecake filling, then cut in half diagonally. Serve 2 waffles for each person and drizzle with honey.
