Swirled Mashed Potatoes

How many of you enjoyed the Superbowl last night? I shared yesterday that I didn't care to watch it because of my feelings towards the Patriots, but seeing them lose would have been satisfying enough for me. Of course the Patirots can't play without cheating and they can't win without cheating, which is the only way they won. So I'm over it.

I'm sure a lot of people ate poorly during the Superbowl and may be looking for a way to get back on the wagon. Well today Mechelle is sharing her recipe for Swirled Mashed using sweet potatoes and russet potatoes. This recipe is particularly special for her as it symbolises two becoming one, perfect for Valentine's Day coming up.

Mashed Sweet Potato

Ingredients

  • 4 medium sweet potatoes, peeled and chopped
  • Salt to water
  • 1 tsp cayenne
  • 1 tblsp. Cinnamon
  • ¼ stick of butter

Directions:

Place potatoes and garlic cloves in boiling water until tender.  Once tender, remove water and combine the seasonings and butter and mash until smooth. Add salt to taste.


 

Mashed Russet Potatoes

Ingredients

  • 5 medium russet potatoes, peeled and chopped
  • Salt to water
  • 5 whole garlic cloves, peeled
  • ¼ stick of butter

 

Directions:

Place potatoes in boiling water until tender.  Once tender, remove water and combine the seasonings and butter and mash until smooth. Add salt to taste.

To create swirl effect, place russet potato mixture into serving bowl and fold the sweet potato mixture.  You can also pipe the russet mixture into a circle, leaving the center open, and place the sweet potato mixture in the middle.
