Irish Cheese and Bacon Popcorn

Hello Lovely,

St. Patrick's Day is this Saturday but I'm not that excited about it. I think I'm saving all of my enthusiasm for beach weather. When I think about St. Patrick's Day an explosion of all things green comes to mind. But green was never really my colour so I always try to think of different ways to celebrate all things Irish without painting myself green or drinking a dreaded Guinness. Enter this super easy snack recipe. This popcorn is best eaten the day it’s made. If you want to serve it at a party, have your ingredients measured ahead of time then assemble right before serving. It really doesn't get any easier than this, but I guarantee this will impress all of your guests!

Irish Cheese and Bacon Popcorn

  • 7 cups salted popcorn (roughly 1/3 cup unpopped kernels)
  • 1/4 cup butter, melted
  • 1/4 cup crumbled bacon
  • 1 cup finely grated Irish cheese*

  1. In a large bowl, toss together the popcorn, butter, bacon, and cheese. Popcorn is best eaten the day it's made.

Hello Lovely,

What does your morning routine look like? For me, I have to have a cup of coffee every morning. It's not even a caffeine addiction. I just like routines. Whether it was water, juice, tea, cocoa, or a particular breakfast item, I like to have a routine and coffee is just a delicious part of that routine.

But let's face it, some mornings, your regular cup of coffee just doesn't do it for you. And with St. Patrick's Day coming up, I thought, what better way to celebrate than with a good old cup of Irish Coffee. To make mine even more Irish, I used my O'Donnell's Irish Cream, which you can pick up from any Aldi's store. The O'Donnell's brand of Irish Cream is a direct product from Ireland just like Bailey's. So feel free to use either one (O'Donnell's is much cheaper though at only $8 per bottle). Because I believe the best part of waking up, is Bailey's in your cup! (Someone get Folger's on the line and tell them I have a new slogan for them).

The classic cold weather cocktail taken to new heights of flavor with Baileys Original Irish Cream.

2 OZ Baileys™ Original Irish Cream

6 OZ Hot Coffee

1 OZ Irish Whiskey

1 DOLLOP Whipped Cream (optional)

  1. Combine Baileys, coffee and Irish Whiskey in a tall "Irish Coffee" glass. I went with the first mug I found in my cupboard, but the glasses typically look like this.
  2. Top with whipped cream.

Letter From Olivia - March Madness

Hello Lovely,

March is upon us and I know this can bring up a lot of mixed feelings. It could be met with dread if you live in a destination city because of wild Spring Breakers; but if you’re a basketball fan, this is your month to shine! That’s why this month’s theme is called March Madness; it’s about to get Cray Cray in here!

For the next two weeks, it’s all about St. Patrick’s Day here on the blog. That’s right, we’re turning into leprechauns! I mean, what’s not to love about rainbows and beer? Am I right? But we don’t want to leave you basketball fanatics (and basketball wives) out. So we’re whipping up some fun basketball themed recipes to serve while you root for your favourite teams.

And that’s not all! March also signals the beginning of Spring. What could you possibly not love about Spring? Flowers are in bloom and for us, it’s already 80-degree weather (not like it ever really went away). So get ready to put on your brightest colours and put away the animal print. (I’ve got a mint green sweater that I’ve been dying to wear since last September). You don’t want to miss all of the Spring themed posts coming your way including much more DIYs! Whether it’s Spring cleaning, spring tablescapes or the usual Spring-themed recipe, Life By Olivia is going to keep you fit, full and cherry this Spring season!

St. Patrick's Day Avocado Banana Smoothie

It's St. Patrick's Day, and I can't wait to get a drink in me to celebrate!

While you could make this beverage alcoholic, I kept it virgin for health reasons. (I lost four pounds!!!) About 5 more and I'll stop, I swear. I promise my fingers aren't crossed behind my back!

I am one of the laziest dieters. I exercise for about 10 minutes every 3 days, and I ended up having 2 cheat days on the weekend.

So I'm all for "juicing" the pounds away.

Avocado Banana Smoothie

Prep time      5 mins             Total time     5 mins                     Serves: 2

½ of one medium avocado, peeled and pitted

1  banana, peeled

⅛ tsp vanilla extract

1 tbsp granulated sugar, or to taste

1 cup soy milk, approximate

6 ice cubes

Combine all ingredients in a blender and process until creamy and smooth (approximately 10-15 minutes), adjusting sweetness to taste and adding more milk as necessary to reach desired consistency.

(Since it's St. Patty's Day, I won't judge if you spike it a little. Just make sure the kiddies don't touch!)
