Salmon Pasta Salad

Hello Lovely,

Eating well is so important. Lately I just do not have the energy to cook or bake. Time isn't a factor but the creative energy and the physical energy are just....not...there! I had a week of meal prepping and while it helped me tremendously to cut down on time spent getting ready in the morning, it left me feeling drained. One of the things I was able to create before throwing in the towel was a delicious Salmon Pasta Salad!

I love easy pasta dishes and I had a salmon fillet in the freezer for weeks that I didn't want to go bad. So I thought, what about a pasta salad with Salmon? It was really easy to put together. If you thaw and marinate the salmon overnight, all you have to do in the morning, is grill it and boil the pasta. You could even save some of the marinade as a dressing for the pasta. So before I hop on a plane today for the annual VIVA conference tomorrow night, I thought I'd share this quick and easy lunch dish that anyone can make!

Salmon Pasta Salad

Serves 1 (simply double ingredients to serve more)

Ingredients

  • Salmon fillet thawed
  • 1/2 cup diced tomatoes 
  • 2 cups pasta of your choice (I used Rotini in lieu of Bow Tie pasta)
  • 2 tablespoons olive oil
  • 1/8 cup Kraft Raspberry vinaigrette
  • 1/8 cup Kraft Balsamic Vinaigrette
  • 1 tablespoon Cajun seasoning
  • pinch of salt
  • grated cheese for topping

Directions

  1. Thaw salmon then mix the vinaigrette, seasoning, salt and olive oil in the salmon pouch. Allow to marinate overnight.
  2. Boil pasta according to directions on box, then drain.
  3. Saute the salmon in a skillet while the pasta cooks.
  4. Once pasta is complete, combine the noodles with the salmon, marinade and tomatoes in a dish. Feel free to add other items like corn, bacon or spinach. I just used what I had on hand because I was in a mad rush.
  5. Top with grated cheese and serve!
  6. Enjoy!

DIY Catnip Toy

I'm baaaaaaaack!!!!

 

And best of all, it's Friday!

 

I got back from vacation on Tuesday and it took me a few days to re-adjust. I don't wish to go into details about my trip but just know that I had a great time and I boyfriend and I really bonded. I got a good amount of shopping done, which was how I came to this project.

 

I was genuinely too lazy to buy cat toys for my cats. But I did manage to buy catnip for them from the Dollar Tree (my favourite store in the entire world). So yesterday, while I waited for my computer to install Windows 10 (which took about two hours to complete), I made these little bad boys (also while watching a marathon of the Daily Show). Is anyone else sad that this show is over? I was doing fine up until Stephen Colbert gave his speech and Jon Stewart gave his final speech. And when Bruce Springstein started playing, I was a puddle. I only started watching the show in 2011, after a college friend could not believe that I had never watched the show. And ever since then I was hooked. Between Jon Stewart and Stephen Colbert, they were the only people who could get me to care about world events and current affairs.

(Let me move on before I start getting sappy again)

Okay, this project probably only took a total of 20 minutes, including prep time.

I used a fabric we had for a really long time, with the intent of making a pillow case out of, but just never got around to making it. I would suggest using a on old scrap piece of fabric that you probably should've thrown away but saved just for a project like this. A nice square size with two pieces of fabric should do the trick.

Start by making a simple satchet or casing. All you have to do is ensure that both right sides are facing together and everything lines up evenly (not that your cats will really notice). Still all the way around the four corners but leave an opening about a teaspoon size.

Turn the satchet inside out. Depending on the shape you went with, it should look something like this (ignore my chipping nail polish):

Then you can stuff your satchet with the catnip. I used my scoop that came with my coffee maker to gently scoop about two teaspoons of catnip into the satchet.

I didn't want it to be too full in case the cats somehow ripped it and it ended up all over the place.

At this point my nosey cat couldn't resist but "inspect" my project.

 He was so cute, eagerly sniffing around my sewing desk, but he had to wait.

And boy was he happy when I was done! I made two (one for each of my cats). Ichigo (my ginger cat, the male) played with it the most at first, and even though there were two, Rukia (my black and white female cat) wasn't too impressed.

She also ran away any time she saw the light from the camera. She's very antisocial like that.

But Ichi liked it and had a ball playing with it. Best of all, it only cost me $1 and approximately 20 minutes to make.

Simple Ways to Refresh Your Bathroom

A bathroom renovation can be a time consuming and expensive undertaking. When I remodelled my bathroom, I knew that I would be limited by space so I couldn’t do anything too grand. I was also limited by budget and decided to start with something simple, like new flooring and a new vanity. It instantly changed the feel of the bathroom and gave me even more ideas for how to improve it moving forward. So if you need to give your bathroom a new look, but don’t know where to begin, here are few cost-effective ways to add a touch of spa-like luxury and make the most of your bathroom space until you can afford to take the plunge on a full makeover.

Paint

It’s amazing what a coat of paint can do to change the look and feel of your bathroom. If you’ve always had a light bathroom, switch it up and choose a darker, more dramatic colour for your bathroom, and vice versa. Light walls will make the space seem more open and bright, while dark colours will add a subtle elegance to your bathroom. 

 Get Fresh Towels

Towels are used daily. If your current towels have been around for a while, they could probably use an upgrade. Invest in a few matching bath and hand towels that complement your new paint colour. Opt for all white towels if you want your bathroom to feel extra luxurious. Personally, I love towels in multiple colours that fit a scheme like tropical or suit the various personalities of your household when there are multiple people using one bathroom. Plush towels are an intense investment so don’t feel bad if you can only afford one at a time.

Tip: If you can’t afford all new towels, refresh your current towels by washing them once without detergent, and a cup of vinegar. This will strip out any soap suds in the towels that build up over time. Once finished the rinse cycle, re-wash the towels with only a cup of baking soda. This will freshen up the smell of your towels. Dry as usual without a fabric sheet.

 Swap Handles, Hooks, and Knobs

A really cheap and easy way to update the look of your bathroom is to switch out the hardware in your bathroom with fun new handles, hooks, and knobs. 

 Add a Cart or Basket for Storage

A storage cart or basket in a small bathroom gives you extra room to display items such as candles and decorative soaps. It's also the perfect spot to keep nicely folded towels, and stash some extra toilet paper. It’s always a good idea to place hand towels out in plain sight so guest aren’t confused as to which towels they should be using. Toilet paper is something else that should be in plain sight when you have guests. Don't make your guest have to dig around your bathroom to find toilet paper.

N.B. If your bathroom is small, try not to get anything too bulky that takes up too much space.

 Add Natural Elements

If you want to make your bathroom feel even more like a spa, add earthy elements such as live plants, scented candles and natural wood elements or stones.
